If you were given the task of finding the best oud you possibly could (online) for around 500$ which would you buy?

The only oud at $500 or less that I would ever really trust is a used Sukar. If you get lucky you might find one in that range eventually. Can you go

That's a tough one.
The "Mid-East" ouds are consistently in the price range and I've had some students who had good luck with them. They're definitely "student" level
instruments but some are OK.
Of course some will tell you that there's no sense in buying a cheapo oud, and it's true.
But my answers are in the spirit of your question and assuming there was no other choice.
Also, Mike seems like he's out, but there have been good reports of the student-level ouds he's been importing from Egypt. I think he said he should
