Replacement tuning pages
I need to replace the tuning pegs on my 11 string out as one has snapped! Problem is I can't find pegs of the same length as those currently in situ.
The current ones are 6cms in length and I can only seem to find replacements that are 8.2cms How important is the peg length given that I would
replace the entire set?

Pegs need to be shaped and cut to fit the oud. You probably won't find premade ones that just happen to fit your exact oud.
The diameter also needs to be shave usually, and even sometimes the taper is different and you need to ream out the holes in the pegbox a bit to
reshape the holes.
Replacing pegs is not a terribly difficult job if you have the right tools and have a little woodworking experience, but it's definitely not as simple
as buying new pegs and dropping them in.
For an idea how much variation there is, try switching the first and last pegs you currently have and see how they fit in their respective holes

1) Until you find a way to replace the one broken peg, one thing you can do is glue the broken peg back together and use it again. It might break
again or it might not, but it does fit the hole.
2) If the remaining 10 pegs are not broken why replace them?
