Here's a couple of Turkish type tunings, from Lowest to Highest:
E A B E A D
C# F# B E A D
I've used the first one since day one...the second I got from Joe Zeytoonian about 20 years ago, but it's been around for eons I think.
For Arabic tuning: one guy I know is using --
C E A D G C - it's kind of interesting on the bottom two that way, or you could just take the EABEAD and just drop it down a whole step.
