I don't know any Oud makers in UAE, however Maurice Farouk Shahata have one branch in Qatar, which I thing so close to you, I hope this would

I don't know any in dubai, but there is an excellent one in Sharja(few minutes from dubai) called Salmeen. a Kuwaiti company. with excellent
record as most of the gulf singers get their ouds from there
