Welcome to the forum Guy. I think the oud is entering something of a renaissance myself, with more people discovering the beauty of this most wonderful instrument outside of the countries it has traditionally been played.
if you are looking for wood for luthiers, try:

http://www.guitartonewoods4luthiers.co.uk/

http://www.touchstonetonewoods.co.uk/index.html

http://www.luthierssupplies.co.uk/

http://www.mimf.com/cgi-bin/WebX

Then there is the lute society and its links to makers. As the lute is a close brother to the oud, you may find some more info here.

http://www.lutesoc.co.uk/

here is a website with a long list of goodies, if you scroll down you'll come to tonewoods, including some located in France.

maybe ask some oud makers in Greece:

http://www.dimitrisouds.com/
and http://www.theodorakis.name

good luck.:)
