it looks to me like turkish saz ,so i think you can use saz bridge and strings.

It has nothing to do with saz. It's closer to an Indian sitar. I attached a picture. For the sympathetics on the left, use .008 plain steel strings
(or something close). The tuning on the sympathetic string corresponds with the fret it is next to. But you can change that according to the scale.
The main strings should be tuned in doubles, since it's a dutar (dutar means two strings or courses). The tuning is in 5th or 4ths usually. I don't
know what gauges are used but I would guess the first course would use .008 as well. The sympathetic strings should run through tiny holes in the
bridge, like an Afghan rubab.

From the different sources I have, the dotar bridge has all the strings passing over, also the resonance strings, so not like rubab or afghan

Instead, the position of the single cicari string is obviously the same as rubab

You're right actually. The sympathetics should be playable and the bridge should allow for it. My picture doesn't show it because it doesn't have
strings.

in the first pic i didnt saw all the tuning pegs....sory.
in that case i have a number of instrument maker in delhi.
